GF, SF, DF Berry Banana Buckwheat Muffins

GF, SF, DF delicious berry banana buckwheat muffins!

I love to create a big double batch of these on the weekend to have throughout the week for a quick, easy delicious snack in hand. They also freeze fantastically so you can use defrost them later!

Here’s the recipe 👇🏽
🧁 Dry ingredients:
- 1/2 cup of buckwheat flour
- 8 tbsp almond flour
- 2 tbsp of stevia (more or less to your sweetness taste preferences)
- 1 tsp baking powder
- few cracks of salt

OPTIONAL: 1/2 a cup of cacao powder to make it delicious and chocolatey! Just add a little more but milk to help with the consistency.

🧁 Wet ingredients:
- 1.5 small ripe bananas mashed
- 2 eggs
- 1/2 teaspoon of vanilla
- 1 cup of berries
- 1/4 cup of oil- I love olive, macadamia, coconut or ghee.
- 1/3 a cup of almond milk or a dairy free milk.

OPTIONAL: choc chips, pepitas, flaked almonds.

🧁 Directions:
- preheat oven to 180 degrees Celsius
- mix your wet and dry ingredients together so they are well combined with no big chunks
- add your mixture to muffin trays or patty pans
- bake for 20 minutes and enjoy! Serve heated or cooled and with ghee or without!
